GFCF Raspberry and Strawberry Ice Cream

”]Yummy strawberriesLast Sunday, I went on a shopping trip with my little prince to Unimart and found fresh deliveries of Driscoll’s big juicy strawberries and fragrant raspberries. I couldn’t resist buying them and keeping myself busy that afternoon experimenting on gluten free cassein free ice cream . The Raspberry which cost me an unbelievable 300php for 175 grams and Strawberry which cost me another 386 pesos for 475 g.

I tried experimenting on how I could make it both gluten free and cassein free and came out with a fruity ice cream that looks like ice cream and tastes like one. I felt that the less confectioner’s sugar I put, the more the flavors of the berries came out.

Raspberry Ice Cream

Ingredients:

75 g potato milk
50 g confectioner’s sugar
2 T Nuttelex
1 tsp xantham gum
175g raspberries
1/2 c hot water

Put everything together and blend. Make sure to pass the mixture through the strainer to remove the raspberries woody particles.

Chill in the refrigerator for an hour. After that pour the mixture in an ice cream maker. I use Cuisinart and it ‘s pretty handy. Churn the ice cream for about 15 minutes to get the texture that you need. It usually hardens at this point.

Yummy Strawberry Ice Cream

175 g potato milk
120 g confectioner’s sugar
25 g Nuttelex
1/2 T xantham gum
475 g strawberries
1/4 tsp vanilla
1 cup hot water

Put everything in the blender and puree.

Chill in the refrigerator for an hour. After that pour the mixture in an ice cream maker. I use Cuisinart and it ‘s pretty handy. Churn the ice cream for about 20 minutes to get the texture that you need. It usually hardens at this point.

I found that omitting the vanilla is better because the potato milk already has a strong vanilla taste by itself.

You’ll have to adjust “sweetness” level when you add sugar to this mixture. I like my ice creams a little fruity and tart.
